Ingredients
2 ¼ cups all purpose flour (270 grams)
1 tbsp baking powder (12 grams)
¼ tsp baking soda (2 grams)
1 tsp salt
7 tbsp butter (cold, preferably frozen) (98 grams)
¾ cup (76 grams) + 2 tbsp buttermilk
2 tsp sugar (8 grams)
Instructions
Cut your butter into cubes, then place into freezer for 15-20 minutes
Preheat oven to 425 degrees
In a food processor, add the flour, salt, baking powder, baking soda, and sugar. Pulse to mix well. Add in the frozen cubed butter and pulse until the mixture starts to form crumbs.
Pour the mixture into a bowl and make a well in the middle. Pour in the buttermilk and begin to mix until a shaggy dough is formed.
Pour the dough mixture onto a clean counter surface dusted well with flour. Using floured hands, bring the dough together, using additional flour if necessary (dough should remain a little bit sticky). Flatten the dough into a rectangle, about ¾ an inch tall, then fold one side to the middle, then fold the other side on top. Turn the dough so that the long side if facing you, then flatten the dough into an ¾ inch tall rectangle and repeat folding steps. Repeat the same process once more, then flatten the dough back into a ¾ inch tall rectangle.
Using a biscuit cutter, begin cutting out your biscuits. Any remaining dough can be rerolled and cut out into more biscuits. You should end up with 8-12. Place the biscuits in a buttered cast iron skillet or on a parchment paper lined baking sheet, but make sure they are close together in order to allow a better rise. With the saved buttermilk, brush the top of the biscuits with it.
Place the biscuits into the oven, 15-20 minutes, or until top is golden brown. Remove from oven and optionally brush with butter.
