Cheesecake Banana Bread
Ingredients
2 cups all purpose flour (240 grams)
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
½ cup unsalted butter softened (114 grams)
¾ cup light or dark browns sugar (160 grams)
2 large eggs at room temperature
3-4 overripe bananas mashed (1 ½ cups)
⅓ cup sour cream (80 grams)
1 tsp vanilla extract
Cream Cheese Filling
8 oz cream cheese
1 large egg room temperature
¼ cup granulated sugar
2 tbsp flour
Instructions
Preheat oven to 350 F. Lightly grease a loaf pan, then line with parchment paper.
In a bowl, mix together the flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl or stand mixer, add in your butter and brown sugar. Using the paddle attachment, cream on medium speed for 2-3 minutes or until the butter is light and airy. Next, add in one egg at a time, making sure the first one is incorporated before adding in the last one. Then, add in your mashed bananas, vanilla extract, and sour cream, and mix until well incorporated. Scrape the side of the bowl as necessary. Finally, on low speed, add in you dry mix and mix until just combined and there is no dry pockets of flour yet. Do not overmix.
In a bowl, add in the cream cheese, egg, sugar, and flour, and whisk well.
Add ½ of the banana bread batter to the loaf pan, then dollop in half of the cream cheese filling on top. Using a toothpick, swirl in the cream cheese. Then repeat this process with the remaining batter and cream cheese
Bake for 60-65 minutes, covering the top loosely with aluminum foil halfway through to prevent too much browning. The cake is done when a toothpick inserted in the middle comes out clean. Cool the bread inside the loaf pan for 1 hour, then remove it onto a wire rack and continue cooling for 10 minutes before serving
