Why This Recipe Works
Dry Ingredients:
All-Purpose Flour (2 cups): Provides the structure for the cake while keeping it soft and tender.
Granulated Sugar (1 cup): Adds sweetness and moisture. It also helps create a soft crumb.
Brown Sugar (1/2 cup, packed): Adds a deep, caramel-like flavor and additional moisture.
Baking Powder (1 teaspoon): Ensures the cake rises evenly and remains light.
Baking Soda (1 teaspoon): Reacts with the acidity in the carrots and yogurt, aiding in the cake's rise and texture.
Cinnamon (1 teaspoon): Brings warmth and enhances the flavor of the carrots.
Nutmeg (1/4 teaspoon): Adds depth with its earthy, spicy notes.
Salt (1/2 teaspoon): Balances the sweetness and enhances the overall flavor.
Wet Ingredients:
Carrots (2 cups, finely grated): The star ingredient, adding natural sweetness, color, and moisture.
Vegetable Oil (3/4 cup): Ensures the cake stays moist and tender.
Plain Greek Yogurt (1/4 cup): Adds tanginess and richness while keeping the cake moist.
Large Eggs (3): Provide structure and stability, binding the ingredients together.
Vanilla Extract (1 teaspoon): Enhances the overall flavor profile.
Optional Mix-Ins:
Chopped Walnuts (1/2 cup): Adds crunch and nutty flavor.
Raisins (1/3 cup): Adds bursts of sweetness and a chewy texture.
Crushed Pineapple (1/4 cup, drained): Adds extra moisture and a hint of tropical flavor.
Why These Ingredients Work Together
Balance of Flavors: The combination of brown sugar, cinnamon, nutmeg, and vanilla creates a warm, spiced flavor that complements the carrots.
Moisture and Tenderness: The oil, yogurt, and grated carrots ensure the cake stays moist for days.
Texture: Optional mix-ins like nuts and raisins add texture and variety to every bite.
Structure and Rise: The eggs, flour, and leavening agents work together to create a cake that’s sturdy yet soft and tender.
