Cherry Matcha Clafoutis
Ingredients
2 tbsp butter (28 grams)
2 cups pitted and stemmed cherries
3 large eggs
1 cup whole or 2 % milk (240 ml)
¼ cup heavy cream (60 ml)
½ cup + 2 tbsp granulated sugar
½ cup all purpose flour (60 grams)
1 ½ tsp matcha powder (ceremonial grade preferred for more flavor)
¼ tsp salt
1 tsp vanilla extract
¼ tsp almond extract
Powdered sugar (optional)
Instructions
Preheat oven to 375 F and set an oven rack to the lower third of the oven.
In a 9-10 inch cast iron pan or baking dish, add in your butter. Heat on low until butter is melted if using a pan, or melt your butter and add to the baking dish. Swirl or spread the butter so that it covers the bottom and sides of the baking vessel. Add your cherries evenly to the baking vessel.
In a bowl, sift in ½ cup sugar sugar, all purpose flour, salt, and matcha powder. Mix well and set aside
In a blender, add in your eggs, milk, heavy cream, vanilla extract, almond extract, and your dry mixture. Mix until well combined. This can also be done by hand in a large bowl. Pour this mixture into your prepared baking vessel.
Bake for 20 minutes, then take out the oven and sprinkle the remaining sugar evenly over the top. Place back into oven and bake for another 25-30 minutes or until the clafoutis is slightly jiggly, but a toothpick comes out clean when inserted in the middle. Let the clafoutis cool for 30 minutes on a wire rack, then dust the powdered sugar on if using.
