Popovers

Ingredients

  • 6 tbsp cold butter + 3 tbsp melted butter

  • 4 eggs (room temperature)

  • 1 ½ cup all purpose flour

  • 1 ½ cup whole milk (room temperature)

  • 3 tbsp sugar

  • ½ tsp salt


Instructions

  1. In a blender, add in the eggs, all purpose flour, whole milk, and salt, then blend until smooth and there is some froth at the top. Add in 1 tbsp of melted butter, then blend once again until smooth. You can either bake now, or let the batter rest for 30 minutes or up to 3 days in the fridge (creates a larger pop) before moving on to the next step. 

  2. Place the popover tray or muffin pan into the oven and preheat to 425 degrees. When the oven reaches 400 degrees, place about 1/2 tbsp of butter into each cup of a 12 cup popover tray, or a full tablespoon into a 6 cup popover tray (muffin pans work).

  3. When the oven has preheated, take out the tray and swirl it to let the butter coat the sides. Then, transfer onto a baking tray on the counter and immediately pour the popover batter into the tray, about ¾ way to the top. Place the popover tray by itself back into the oven, then bake for 20 minutes, then lower the oven to 350 degrees and continue cooking for 10-15 minutes, or until golden brown. During the baking process, do not open up the oven. Serve the popovers with jam, butter, or whatever you would like.
