Ingredients
1 cup warm milk (110 degrees)
2 ½ tsp active dry yeast
½ cup granulated sugar (100 grams)
6 tbsp melted unsalted butter + more room temp butter for the bowl
1 egg
2 egg yolks
1 tsp salt
1 ½ tsp vanilla extract’
4 cups all purpose flour (480 grams)
Topping
¾ cup light brown sugar (160 grams)
½ cup unsalted butter
¼ cup maple syrup
½ tsp salt
1 ½ cup chopped pecans (160 grams)
Filling
½ cup light brown sugar (106 grams)
2 tsp cinnamon
4 tbsp melted unsalted butter
Instructions
Dough
Heat the milk to 110 degrees F, then add in half of the sugar (50 grams) and all of the yeast. Cover and set aside for 5-10 minutes, or until the mixture is foaming.
While waiting for the yeast to get ready, add the remaining sugar, melted butter, egg, egg yolks, and vanilla into a bowl and mix well.
In the bowl of your stand mixer, add in both of the mixtures from above and mix together on medium speed. Then, add in half of your flour, and continue mixing until combined. Finally, add in the remaining flour and mix using the dough hook for 5 minutes on medium speed, or until the dough comes together.
Transfer the dough to a lightly floured surface, then knead the dough until it is smooth and elastic, or when the dough bounces back when lightly pressed. Place the dough into a lightly buttered bowl, then cover the bowl with a towel or plastic wrap, and place in a warm place. Rest for two hours or until the dough has doubled in size.
Topping
While the dough is rising, butter the sides and the bottom of a 9 by 13 baking pan. Then, evenly distribute your chopped pecans into it. Finally, combine the light brown sugar, butter, maple syrup, and salt in a pan, and heat on low while stirring constantly until both the butter and sugar are melted. Pour the mixture over the pecans.
Dough
Preheat oven to 375 degrees. Transfer your risen dough to a lightly floured surface, then gently roll it out into a 12 by 18 rectangle.
In a bowl, mix together the brown sugar (filling) and cinnamon and set aside. Brush the top surface of your dough with the remaining melted butter, then evenly spread the filling across the top.
Gently oll the dough up tightly along the length side, then cut the dough into 12 to 13 even pieces (floss works the best). Place these into the prepared baking pan, then bake for 15 minutes. Take the dough out and cover the dish with aluminum foil, then place back into the oven and bake for an additional 20-25 minutes.
Take the buns out the oven, then let cool for a few minutes before running a knife along the edge of the pan. Invert the baking pan onto a clean plate, and serve.
